  • 62.5 g italian five grains

  • 100 g peas (fresh or frozen

  • 100 g green beans cut to 1cm size

  • 100 g broad/fava beans

  • 100 g feta chese

  • 0.5 handful fresh dill chopped fine

  • 0.5 preserved lemon peel chopped fine

  • 0.5 lemon's juice

  • 2 T / 24 g olive oil

  • salt and pepper

Italian Five Grain Salad

Method

  1. boil the grains in a largish pot with salt for 10-12 minutes
  2. with 4 minutes to go, put the green beans in the pot
  3. with 2 minutes to go, put the peas in the pot
  4. with 30 seconds to go, put the broad/fava beans in the pot
  5. then pour into a sieve and cool with tap water
  6. mix in the remaining ingredients, with the feta last
  7. allow to sit for 30 minutes
