Ingredients

- 0.75 c / 170 g butter
- 0.5 c / 100 g sugar
- 1.5 egg separated
- 1.5 c / 180 g flour
- 1.25 c / 175 g walnuts or pecans chopped very fine
- 1.5 pot jelly, your choice(s
Method
Cream butter and sugar.
Mix in egg yolk, then flour.
Form into small balls about 1 ½ inch in diameter.
Dip in the unbeaten egg white, then roll in chopped nuts.
Place on a greased cookie sheet and press flat with the bottom of a glass.
Bake at 300F for 5 min, then remove from the oven and immediately press the center down with a thimble or teaspoon for the jelly to sit in later. Back again until lightly golden (18 - 25 min).
Cool and fill center with jelly, let sit for a few hours.
