Ingredients

- 1.5 c / 341 g butter
- 3 c / 600 g sugar
- 4.5 eggs
- 3 t vanilla
- 3 t cream of tartar
- 1.5 t / 9 g baking soda
- 4.5 c / 540 g flour
Method
Cream sugar and butter.
Add eggs one by one, then rest of ingredients slowly.
Refrigerate 4 hours.
Work quickly with dough, not too much flour, keeping non-working dough in the freezer.
Bake for about 10 min at 375F oven.
Substitutions
- Cream of Tartar - 3 times the amount in lemon juice or vinegar (but remember to add more flour to compensate for extra moisture)
- Baking Soda for Powder - 1t powder equals ¼ t baking soda
