Ingredients

- 3 c / 681 g butter
- 6 c / 1200 g sugar
- 9 eggs
- 6 t vanilla
- 6 t cream of tartar
- 3 t / 18 g baking soda
- 9 c / 1080 g flour
Method
Cream sugar and butter.
Add eggs one by one, then rest of ingredients slowly.
Refrigerate 4 hours.
Work quickly with dough, not too much flour, keeping non-working dough in the freezer.
Bake for about 10 min at 375F oven.
Substitutions
- Cream of Tartar - 3 times the amount in lemon juice or vinegar (but remember to add more flour to compensate for extra moisture)
- Baking Soda for Powder - 1t powder equals ¼ t baking soda
