Ingredients

  • 4 c / 908 g butter

  • 8 c / 1600 g sugar

  • 12 eggs

  • 8 t vanilla

  • 8 t cream of tartar

  • 4 t / 24 g baking soda

  • 12 c / 1440 g flour

Method

Cream sugar and butter.

Add eggs one by one, then rest of ingredients slowly.

Refrigerate 4 hours.

Work quickly with dough, not too much flour, keeping non-working dough in the freezer.

Bake for about 10 min at 375F oven.

Substitutions

  • Cream of Tartar - 3 times the amount in lemon juice or vinegar (but remember to add more flour to compensate for extra moisture)
  • Baking Soda for Powder - 1t powder equals ¼ t baking soda
