Ingredients

- 300 gr plain flour (sifted) (3oz)
- 200 gr (2oz) caster sugar (2oz)
- 1700 ml milk (3/4 pint)
- 12 large eggs
- 12 drops of vanilla extract
- 4 pinch of salt
- 8 T / 100 g cinnamon and sugar for plums
- 8 T / 114 g unsalted butter
- 1800 gr ripe plums, any varieties, stones removed, quartered (1 lb)
- 4 T / 31 g icing sugar (sifted)
Method
preheat oven, 220C/425F
- whisk the sifted flour ,sugar, eggs, milk, vanilla extract and pinch of salt together, leave to rest for 30 minutes
- butter a round ovenproof dish 25cm(10 inch)
- pour the batter into the dish, spread the plums, dust with sugar and cinnamon
- bake for 25-30 minutes
- after a few minutes out of the oven, the pudding will sink a bit but this will not spoil the taste, dust with icing sugar
