Simple but flavorful rice side.
Ingredients

- 4 garlic cloves, crushed
- 2 large onion, halved and sliced
- 500 chestnut mushrooms , sliced
- 50 butter
- 500 brown basmati rice
- 1000 hot vegetable stock
- 8 cardamom pods, bruised
Method
Fry the garlic, onion and mushrooms in the butter for 5 minutes. Add the rice, stock and cardamon, cover and simmer for 25 minutes or until the stock is absorbed and the rice is tender.
