A Haswell Thanksgiving favorite.
Ingredients
Scaled 4
- 16 medium baking potatoes
- 1 c chopped onions (or chives)
- 4 c / 960 g sour cream
- 2 t pepper
- 2 t / 12 g salt
- 16 slices bacon (streaky)
- 16 T Parmesan cheese
- 8 T / 114 g butter
You can can prepare ahead and even freeze these for a few months.
Method
- prick with a knife and bake the potatoes in a 400F oven for approximately 1 hour
- fry the bacon until crispy
- saute onions until soft
- cut cooled, but warm potatoes in half
- scoop out insides with a spoon, protecting the skins
- place skins in baking dish
- mash potatoes with butter, sour cream, crumbled bacon and onions
- fry potato mash until warmed through (about 15 min)
- put mash mix back in the potato skins
- sprinkle Parmesan over the top (some paprika as well is traditional)
- dot with extra butter if desired
bake in 350F oven for 30 minutes
