Given to my by my favorite Lebanese deli in NYC when I told them I was leaving the city. So simple I could have cried...
Ingredients
- 2 cans green lentils
- 1/2 red onion, chopped fine
- 2-3 carrots peeled and diced very small
- 1-2 lemons juiced
- 1/4 c olive oil
- salt
- pepper
This very simple salad takes minutes and tastes better after sitting for a couple of hours. It should be fairly lemony as you make it, but will mellow with time.
You can also use puy or dried green lentils. Approximately 300 grams worth.
Method
Mix ingredients. Let sit for 2-24 hours. Season to taste.
