Ingredients

  • 1 T dijon mustard

  • 1 T honey

  • 1/2 t tarragon

  • 1 plum tomato sliced thin

  • 1 T capers, chopped

  • 1/4 c white wine (for the pan)

Method

  1. Mix all ingredients (except the wine).
  2. spread on top of salmon fillets (or loin cuts)
  3. pour wine in baking tray
  4. bake for 18-25 minutes on 350F
