Lovely and dead simple sauce to make salmon come alive.
Ingredients
- 1 T dijon mustard
- 1 T honey
- 1/2 t tarragon
- 1 plum tomato sliced thin
- 1 T capers, chopped
- 1/4 c white wine (for the pan)
Method
- Mix all ingredients (except the wine).
- spread on top of salmon fillets (or loin cuts)
- pour wine in baking tray
- bake for 18-25 minutes on 350F
