Ingredients
- 1/2 lb pasta for stuffing (cannelloni is easiest)
- 1 pack hard mozzarella cheese sliced
- 1/2 c parmasan cheese
Stuffing
- 2 lb combination of ground pork, veal and beef
- 1 onion chopped
- 1 T olive oil
- 8 oz tomato sauce
- 1 bay leaf
- 1 clove garlic (minced)
- 6 chopped mushrooms
- salt and pepper to taste
Sauce
- 1 can cream of tomato
- 1 can cream of mushroom
- 1 can cream of chicken
- 3 soup cans of milk
- 1/2 soup can red wine
- 1 c grated cheddar cheese
- salt and pepper to taste
This dish may be prepared in advance or frozen before baking.
Method
pasta
- cook pasta according to package directions, drain and cool
stuffing
- saute onion in olive oil until transparent
- add meats and brown
- add rest of stuffing ingredients and simmer for 1/2 hour
sauce
- mix soups, milk, wine and cheese together in large pan
- cook stirring over medium heat, bring nearly to boil
- add salt and pepper to taste
cooking
- take cooled pasta and stuff with meat mixture
- place in shallow baking dish in single layer
- place thinly sliced mozzarella between pasta
- pour sauce over all
- sprinkle with Parmesan cheese
- bake at 325F until bubbly (45 min to 1 hour)
