Salads

Salad recipes that combine fresh, seasonal ingredients with a variety of dressings.

  • Almut's Bok Choy Salad
This salad is amazing. Far better than it should be. I urge you to give it a go. It will make far too much dressing and topping, but you can save it for ages in the fridge and make the salad again and again.
  • Caprese Rice Salad
This is another Weight Watcher's recipe that Angela has made her own.
  • Creamed Cucumbers
This has been a Mahnke and before that a Ross family tradition to have with both Thanksgiving and Christmas dinners. It really cuts the richness of turkey or beef. Lately I have learned there is a Polish dish that is nearly identical whose name translate to 'misery'.
  • French Chicken and Potato Salad
A simple, but tasty meal for warm weather.
  • Italian Five Grain Salad
The idea is from Ottolenghi, who uses so many grains and herbs in his salads.
  • Jim Smith's Caesar Salad Dressing
Growing up, our neighbour, Jim Smith, made this for a dinner party. At the age of six or so, I headed over to the Smith's house the next day and got this recipe. I still make it about twice a month.
  • Kisir
Some shape this salad into patties, to create a vegetarian version of the Lebanese dish kibbeh nayyeh (lamb and bulgar tartar), but I prefer it loose, a bit like a couscous salad. In the south of Turkey, near the Syrian border, they tend to use pomegranate molasses instead of lemon juice in their kisir. I use both, and then go to town by garnishing the dish with pomegranate seeds, too. Serve with fresh lettuce leaves, either as a starter or as part of a mezze.
  • Lebanese Lentil Salad
This very simple salad takes minutes and tastes better after sitting for a couple of hours. It should be fairly lemony as you make it, but will mellow with time. You can also use puy or dried green lentils. Approximately 300 grams worth.
  • Tabouleh
This is a winner of a salad and a Turkish classic.
