I always though this had to be soggy leftover vegetables until I moved to the UK. Now I know you can make it anyway you want. No rules!
Method
- peel and boil potatoes
- mash potatoes when tender with milk and salt (approximately 1/2 teaspoons) to taste
- meanwhile braise thinly sliced leeks in 1 teaspoon butter for 5 minutes on med high
- add cabbage, braise until lost about half its size (10 minutes)
- mix cabbage and leeks with potatoes, add pepper and salt if needed
- head non-stick pan with 1 teaspoon butter, when hot add mixture in 4 even balls and push down.
- fry for about 10 minutes a side on med-low temp, looking for a very brown texture
