You can can prepare ahead and even freeze these for a few months.
Method
- prick with a knife and bake the potatoes in a 400F/200C oven for approximately 1 hour
- fry the bacon until crispy
- sauté onions until soft
- cut cooled, but warm potatoes in half
- scoop out insides with a spoon, protecting the skins
- place skins in baking dish
- mash potatoes with butter, sour cream, crumbled bacon and onions
- fry potato mash until warmed through (about 15 minutes)
- put mash mix back in the potato skins
- sprinkle Parmesan over the top (some paprika as well is traditional)
- dot with extra butter if desired
- bake in 350F/180C oven for 30 minutes
