The idea is from Ottolenghi, who uses so many grains and herbs in his salads.
Method
- boil the grains in a largish pot with salt for 10-12 minutes
- with 4 minutes to go, put the green beans in the pot
- with 2 minutes to go, put the peas in the pot
- with 30 seconds to go, put the broad/fava beans in the pot
- then pour into a sieve and cool with tap water
- mix in the remaining ingredients, with the feta last
- allow to sit for 30 minutes
