At first, this dough is hard to work with, so fold in a bit of flour. And make sure you get the dough very, very cold and keep it cold between batches
Method
- Cream sugar and butter.
- Add eggs one by one, then rest of ingredients slowly.
- Refrigerate 4 hours.
- Work quickly with dough, not too much flour, keeping non-working dough in the freezer.
- Bake for about 10 minutes at 375F/190C oven.
Substitutions
- Cream of Tartar - 3 times the amount in lemon juice or vinegar (but remember to add more flour to compensate for extra moisture)
- Baking Soda for Baking Powder - 1t powder equals 1/4 teaspoon baking soda
